1 kg ground beef
250g onions, sliced fine and fried crisp
4 tbsp yogurt
1 tsp papaya or kiwi paste
Half tsp turmeric powder
1 tsp red chilli powder
Half tsp black pepper powder
1 tsp garam masala powder
1 tsp ground allspice (kabab cheeni)
2 tsp ginger garlic paste
1 tbsp lemon juice
A handful of coriander and mint leaves finely chopped
2 green chillies - finely chopped
2 tsp breadcrumbs
2 tbsp oil
Salt to taste
In a mixing bowl put beef and add all the remaining ingredients to it. Mix really well and keep it to marinate for at least 2 hours in the refrigerator.
Heat or burn a small piece of charcoal on the stove on medium heat until it turns red. Take a small piece of foil and shape it into a shell. Place this shaped foil onto the beef mixture. Now place the coal into the shell and pour 2 tbsp of oil onto it. Immediately cover the bowl with a tight lid and wrap the lid with a kitchen cloth so that the fumes do not escape. Keep this aside covered for about 10 minutes so that the wonderful aroma of the coal fumes incorporate into the beef really well adding taste to its flavour.
Now carefully remove the coal and foil and pour the beef mixture into a baking tray. Bake at 400 degrees F for forty minutes and then reduce to 300 degrees F for 20 minutes.
Its now ready to serve!
