Kadai / Karahi Chicken
10 small sized pieces of chicken with bone
1 1/4 cups water
2 tbsp oil
2 medium sized onions finely sliced
2 tsp ginger garlic paste
Half tsp turmeric powder
1 tsp red chilli powder
2 tbsp lemon juice
Half tsp garam masala powder
Half tsp black pepper powder
1 tsp zeera dhaniya (cumin and coriander seeds) powder
3 tomatoes, roughly chopped
2 green chillies
Mint and coriander sprigs to garnish
Salt to taste
Heat the oil in a heavy pan and stir-fry until the onions turn brown in color. Add the chicken and fry for about 3 minutes over a medium heat. Gradually add the ginger garlic turmeric, red chilli, lemon juice, garam masala, black pepper, zeera dhaniya, tomatoes and green chillies and gently stir to blend all the flavors together. Fry for at least 10 minutes and then add 2 cups of water. Cover and cook on low-medium heat for about half an hour or until the chicken gets tender. Add the salt.
Transfer the spicy chicken mixture to a serving dish and garnish with a few sprigs of fresh mint and coriander before serving.
