Dosa, Aloo Saag & Phalli Ki Chutney

South-Indian Pancake, Potato Saag & Peanut Chutney
Ingredients for Dosa :
3 cups rice
1 cup maash dal (split black gram or urad dal)
Half a tsp methi seeds (fenugreek seeds)

Method :
Mix the rice, dal, fenugreek seeds and wash thoroughly. Soak in clean water for about 6-7 hours or overnight. Then grind it to a paste and add water so that you achieve a thin batter. Add salt according to your taste. This batter should be covered and kept for 12-24 hours for fermentation.
Now heat a non-stick pan on medium heat (pans used for making crepes/pancakes) , wipe it with a clean kitchen towel/cloth dipped in oil (this will normally prevent dosas from sticking). Pour a spoonful of the batter in the center of the pan, spread it evenly with the back of the spoon making a thin round shape. Drizzle a teaspoon of oil over it. Remove the dosa with the spatula when it looks crisp and golden brown.
Serve hot with Aloo Saag and Chutney !!

Ingredients for Aloo Saag :
4 medium sized peeled, boiled and mashed potatoes
1 large onion finely sliced
1 tsp mustard seeds
1 tsp cumin seeds (zeera)
2 whole red chilles
1 tsp ginger garlic paste
Half tsp turmeric powder
10-15 curry leaves
2 green chillies
1 cup finely chopped coriander leaves
Half cup oil
Salt to taste

Method :
In a  deep bottomed non-stick pan , on medium heat fry the onions in oil until they turn translucent pink in color. Now add the mustard seeds, cumin seeds, curry leaves, red chillies, ginger garlic paste and the turmeric powder. As soon as the ginger garlic paste turns brown in color add the mashed potatoes and mix well. Fry for about 5 minutes and then add the green chillies and salt. On low heat, fry for another 5 minutes keeping it covered. Garnish with coriander leaves.

Ingredients for Peanut chutney :
1 1/2 cups peanuts - roasted
2 tbsp shredded coconut powder - roasted
1 tsp cumin seeds - roasted
1 tsp coriander seeds - roasted
2 whole red chillies
2 green chillies
1 tomato finely chopped
2 tsp tamarind soaked in water
Salt to taste

Method :
Blend all of the above ingredients along with the strained juice of tamarind and 1 cup water in a blender until a smooth, fine paste has achieved.

Dosa, Aloo saag and Peanut chutney taste awesome together !!!
