Bottle gourd Curry (Kaddu Ka Saalan)

Kaddu Ka Saalan

Bottle Gourd is a vegetable that has many properties which are helpful in healing like curing digestion related problems like constipation, has a cooling effect, is very low in calories and helps in weight loss, very good for the skin, acts as a very good medicine for sleeplessness (insomnia) when mixed with sesame seeds and it also revitalises the body !

Ingredients :
1 bottle gourd or Calabash peeled and cut into small sized cubes
1 large onion thinly sliced
Half tsp mustard seeds
1 tsp Ginger / garlic paste
Half tsp turmeric powder
Half tsp red chilli powder
1 tbsp sesame seeds roasted and ground to powder
1 green chilly finely chopped
Half a cup finely chopped coriander leaves
Salt to taste

Method :
In a pressure cooker heat 3 tbsp oil and fry the onions until they turn golden brown in color. Now add the mustard seeds, ginger/garlic paste, turmeric powder and red chilli powder and fry for about a minute and then immediately add the pumpkin and the sesame seeds powder. Mix well and then add half a cup of water and then pressure cook on high heat until the first whistle and then reduce the heat to low and cook for another 5 minutes. Remove from flame, open the lid when the pressure's completely gone and cook again on medium heat until the oil starts to separate or the water is almost dried off ! Add the green chilly, coriander leaves and salt. Keep on low flame for a couple of minutes and serve hot with chapatis, rotis and daals !
