1 lb Okra / Bhindi - washed, dried and cut into rings
1 medium sized onion - finely sliced
Half tsp turmeric powder
Half tsp red chilli powder
Salt to taste
In a non-stick pan on medium heat, add 2 tbsp oil and fry the onions until they turn light golden brown in color. Now add the turmeric powder and the okra, saute really well for about 12 minutes or until the vegetables turn tender and cooked well. Put the red chilli powder and drizzle the salt according to your taste and fry for another 5 minutes.
Serve with chapatis, parathas and raitas !
