Penne Pasta In Alfredo Sauce
Ingredients :
450 grams Penne pasta
Half kg beef mince cooked according to your taste
Half a tsp black pepper powder
1 1/2 cups Alfredo sauce
4 tbsp of canned corn niblets
1 capsicum chopped finely or thinly sliced
A few sprigs of finely chopped fresh parsley
Salt to taste

Method :
First of all prepare the beef mince according to your taste ! Normally, what I do is add onion paste to 3 tbsp oil on medium heat , fry for 5 minutes and then add half a tsp of ginger / garlic paste , half a tsp of red chilli powder, half tsp black pepper powder , half a tsp of italian seasoning. Then add mince to it and salt to taste and cook until it's done (i.e., when you see the oil starts to separate).
Now you can add the corn and capsicum to the mince mixture you prepared, saute for about 3-4 minutes. Put it off the flame and keep it aside !

Things you need to prepare the Alfredo sauce :
Half tsp butter
2 cloves minced garlic
One and a half cups fat free milk
2 tbsp flour
1/3 cup grated parmesan cheese

Method to prepare the Alfredo sauce :
In a medium sized sauce pan over medium heat melt the butter. When the butter is melted add the minced garlic cloves and cook for a minute.In a bowl combine the 1 1/2 cups of fat free milk with 2 tablespoons of flour. Make sure the flour is mixed into the milk well.
Add the milk/flour mixture to the sauce pan with the butter and garlic. Cook over medium high heat until it just starts to boil. Stirring or whisking constantly until the mixture thickens. This should take about 5 minutes.

Add 1/3 cup of grated Parmesan to the sauce pan and stir it into the milk.
Lower the heat to low and cook for about 5 minutes.

In a deep bottomed vessel boil enough water needed to cook the penne pasta. As soon as it starts boiling add one tsp of olive oil and the uncooked pasta to it. Boil for about 10-15 minutes or until the pasta is done ! Now drain the pasta into a colander placed into your kitchen sink. Lift the colander and shake off excess water. 

Now add the mince mixture to the pasta and mix well , then the Alfredo sauce. The sauce should evenly coat the pasta.  Garnish with parsley !

This variation of corn and capsicum was suggested by my lovely sister who is a great cook. Bruschetta and pasta go well together.  

The corn is a great addition to this recipe that will leave your taste buds yearning for the next juicy, crunchy bite :)
