Chicken Korma is Mughlai dish made up of Yoghurt and it is one of very calm and creamy recipes
This is one dish my husband always craves for ! The first time I made it for him he was head over heels in love with it :) I usually make chicken korma with khadi daal which is made of lentils and curry leaves, a combination that's made for each other.
1 chicken skinned and cut into 10 pcs
1 cup fried onions
1 1/2 cups yogurt
1 tbsp ginger/garlic paste
Half tsp turmeric powder
2 tsp red chilli powder (if you want it mild or less spicy 1tsp is fine)
Half a tsp of garam masala powder
Half a tsp of black pepper powder
2 small sized cinnamon sticks
3 bay leaves
2 tbsp lemon juice
Roasted nuts ground to a powder (6 almonds, 6 peanuts, 2 tsp coconut powder and 1 tsp poppy seeds)
3 green chillies chopped
A few coriander leaves finely chopped
A few mint leaves finely chopped
Salt to taste !
In a large mixing bowl put the chicken and add fried onions, yogurt, ginger/garlic paste, turmeric powder, red chilli powder, garam masala powder, black pepper powder, lemon juice and salt to taste. Keep it aside for 1-2 hours !
Take a deep bottomed vessel heat half a cup of oil on medium heat and add cinnamon, cardamoms, cloves and bay leaves. Now add the chicken mixture and fry well for until 10 minutes and then add 2 cups of water. Cover with lid and let it simmer , stir occasionally ! Add the powdered nuts, green chillies, coriander and mint leaves. Now cook until the oil starts to separate , the chicken is tender and you achieve a gravy like consistency. Don't forget to check the salt.
Garnish it with chopped coriander leaves and fried onions .... makes an awesome combination with Naans, matar pulao or khadi daal (my upcoming recipe)
