Roasted tuscan style bruschetta on ciabatta bread
An Italian appetizer of toasted bread slicesrubbed with olive oil and garlic and topped with diced and roasted  potatoes,onions,zucchini,red peppers,eggplant and basil,
 salt, and pepper andserved warm or with melted cheese on top !


Ingredients :
1 loaf Ciabatta or French bread , cut horizontally
3 tbsp olive oil
1 clove garlic
400g vegetables ( potatoes, onions, zucchini, red peppers and eggplant ) roasted or grilled on a pan
Half cup feta cheese
2 tbsp fresh basil

Method :
Preheat broiler to high. Line a baking tray with foil. Drizzle cut sides of bread with 2 tbsp olive oil. Broil 1 minute, until crispy. Remove from broiler and carefully rub toasted bread with garlic clove. Place cooked vegetables on the bread, top with crushed feta cheese and return to the broiler. Broil until cheese melts, about 2-3 minutes. Remove, drizzle with remaining olive oil and sprinkle with basil. Slice and serve immediately.

A really good appetizer to enjoy while watching Super-bowl :)
