Pav Bhaji

Pav bhaji
It is a fast food dish that
 comes from Maharashtra, India
 which consists of curry
 that is served with pav (bread/buns) !
Ingredients :
Half a packet of frozen mixed vegetables (thats around 2 cups)
1 tomato chopped
2 medium sized potatoes boiled and mashed
1 large onion sliced
2 green chillies
Quarter cup butter or oil
2 tsp lime juice
1 tsp ginger / garlic paste
Half tsp turmeric powder
1 tsp red chilli powder
1 tbsp pav bhaji masala powder ( I use Badshah masala)
Chopped coriander leaves for garnishing
1 cup water
Buns / dinner rolls lightly grilled on a pan with butter
Salt to taste

Method :
In a non stick pan add butter or oil and fry the onions on medium heat until the color turns slightly pink. Then add the mixed vegetables, green chillies and fry for 2 minutes and then add the tomatoes. Saute well and then add ginger garlic paste and turmeric powder , fry for a minute or so and add the red chilli powder. Now put the boiled and mashed potatoes and mix well , then add lime juice and 1 cup of water. Close the lid and cook until the veggies are tender. Once they are done add the pav bhaji masala powder and salt.
Blend the mixture with a hand blender or in a mixi until you achieve a smooth paste ! Some people mash the mixture with a potato masher when they don't want a very fine curry ... but that also tastes great . Take out the mixture in a nice serving bowl , garnish it with finely chopped onions, coriander leaves and a dollop of butter in the middle . It is served with buns or dinner rolls lightly grilled on a pan with butter :)
