Paalak Paneer

Paalak Paneer
Ingredients :
A whole bunch of fresh spinach leaves - finely chopped, washed thoroughly and drained well
1 medium sized onion finely chopped
1 tsp ginger garlic paste
Half tsp turmeric powder
Half tsp red chilli powder
1 tsp zeera dhania powder (cumin seeds/coriander seeds powder)
2 green chillies finely chopped
6-7 cashew nuts roasted and ground to a powder
Half a cup of fresh sour cream
9-10 cubes of paneer (cottage cheese)
A few sprigs of coriander leaves finely chopped
Half a cup margarine
Salt to taste

Method :
In a non stick pan fry the onions in 2 tbsp of oil for 2 minutes then add ginger garlic paste , turmeric and red chilli powder . Saute for a minute and then add green chillies, zeera dhania powder, coriander leaves and the spinach. Now mix well and add half a cup of water and salt to taste. Cook on medium heat until the water is almost dried off but make sure that there is some water still remaining in order to blend the mixture into a fine paste. Blend it in a mixer until you achieve a smooth paste like consistency . Now return the mixture into the pan and add sour cream .
In a separate pan heat the margarine and fry the paneer until they turn light golden brown in color. Add this fried paneer along with the margarine to the spinach mixture . Mix well and garnish with finely chopped coriander leaves and decorate with sour cream and butter on top !
Paalak paneer is a rich creamy Indian dish that tastes excellent with naans, rotis, pulaos and tandoori chicken :)

Paalak Paneer tastes good with Tandoori chicken and Matar (peas) pulao !
