|Hot And Sour Soup|
4 chicken legs boiled and shredded
Broth in which the chicken legs were boiled ( strain to remove the bones and to obtain a clear broth)
Vegetables ( Mushrooms , Capsicum , Carrots , Spring onions ) chopped into small pcs
1 can corn niblets
1 Chicken stock (Knorr / Maggi)
1 egg white , whisked nicely
3 tbsp cornflour dissolved in quarter cup of water
1 tsp black pepper powder
Ajinomoto - a pinch
Green chillies chopped finely
Salt to taste
In a pot take the broth of the boiled chicken legs and add 4 cups of water . Put on medium heat . Add the corn , chopped veggies , chicken , stock , black pepper , ajinomoto, green chillies and salt . Mix well and stir for a few minutes . Now add soy sauce , about 3 tbsp or until you achieve a good , appealing brown colour , then add vinegar , about 3 tbsp or according to your desired taste , chilli sauce 1 tsp , few drops of tabasco sauce . Simmer for about 15 minutes , until the veggies are done .
Now pour the whisked egg white very slowly in small amounts and slightly whisk the soup simultaneously so that you don't form big lumps / pcs of the egg !
As soon as you have done this , it's now time to add the mixed corn flour . Add the corn flour slowly at intervals and stir at the same time until you achieve a slightly thick consistency . Add salt according to the taste . Drizzle some chilli flakes on top to tantalize your taste buds :)
